加非常少的初榨橄欖油（建議不要用低煙點或者普通的橄欖油，但如果不在乎壽命也可以），又或者完全不加也可以，煙肉製油的效率很高。這次我用了胡桃木煙肉。

在低火煎香的同時，可以和整道菜中最會反抗的食材搏鬥——沒錯就是洋蔥。洋蔥和蒜頭的份量隨意就好，只要不是比肉還多都沒有什麼問題。之後用煙肉油煎香的洋蔥會帶來比較多的甜味，因為懶惰所以我直接用乾蔥替代，味道會比較濃烈，但它們依然是會反抗的。
