Iodine solid has a simple molecular structure.
The weak attraction between iodine molecules and water molecules are not strong enough to overcome the attractions between water molecules in water. Water molecules is highly polar. The H atom in water molecule carries partial positive charge, while the O atom in water molecule carries partial negative charge. Hence, this is a (relatively ) strong attraction between water molecules. Therefore, iodine is insoluble in water.
However, when in organic solvents such as heptane.
The attractions between iodine molecules and heptane molecules are similar (stronger) than those (i.e. the weak van der Waals' forces ) between iodine molecules in iodine and those between (i.e. the weak van der Waals' forces) heptane molecules. Therefore, iodine is soluble in heptane
However, not ALL substances with simple molecular structure is insoluble in water. HCl has a simple molecular structure, but HCl dissolves in water to give hydrochloric acid.
