另外，清代書法名家伊秉綬(他的老師叫劉墉)有一次舉辦家宴，

廚師煮麵時原本要將麵條丟進開水鍋裡，卻忙中有錯，誤扔進油鍋裡。

廚師發覺時麵已經被炸熟，只好硬著頭皮把麵撈起來，放進開水鍋再煮，

麵卻比平時更為可口。

於是這道菜即以伊秉綬之名，命名為伊麵(伊府麵)。

也就是台灣人所謂的意麵。
