Ow the researching, I am in a discord chat with other author's and we were laughing that our search results would put us on a black list somewhere haha. 'How long does it take to bleed to dead', 'how long can you walk in a day', 'old fashioned term for..." etc
Also I often struggle with medieval realism vs fantasy. You mention the library, well I had a deep dive into medieval lamps. Torches weren't as widely used as fantasy stories would make you think. Instead they made more use of rush lights. But who knows what a 'rush light' is? So do I use 'rush light' or stick to 'torches' which are less realistic but people will understand the concept.
I struggled with the hours as well, typically I make them look at the sun, or listen to their body (they get hungry in the evening XD)
But you bring up a good point about the availability of that knowledge and whether it's just better to use candles and torches for lighting a scene cause, that's what most people are familiar with. I suppose it depends on the story you're telling and the scene, but yeah a pretty interesting conversation to have.
